I used to LOVE mint chocolate chip ice cream but not anymore…..all because of this recipe that uses real, healthy ingredients that makes it taste absolutely incredible. In my opinion, the mint chocolate chip ice cream from the store pales in comparison.

Is raw milk safe?

Depends on who you ask. As long as you are sourcing from a clean farm you trust, yes. If you look at history, raw milk is what our ancestors drank. There are multiple studies that show that raw milk is actually a lot safer to drink than pasteurized milk unlike what the mainstream media led us to believe. Paul Saladino and Ancestral Wisdom share a lot on this topic and the studies.

Are raw egg yolks safe?

Just like raw milk, depends on who you ask. Again, you will want to find a farm that you trust. Consuming raw egg yolks (and raw milk) from a reputable source, provide many bioavailable nutrients that are otherwise lost in the cooking or heating process.

Fresh Mint Chocolate Chip Ice Cream

Use fresh mint and dark chocolate to make a healthy version of your favorite mint chocolate chip ice cream from the store. So easy, refreshing, and incredibly delicious!

Ingredients
  

  • 2 cups fresh mint leaves
  • 2 pinches salt
  • 1 1/2 cup cream
  • 1 3/4 cup raw milk
  • 1 tbsp vanilla we use homemade
  • 4 egg yolks
  • 1/2 cup maple syrup or honey
  • 1/2 cup dark chocolate chips

Method
 

  1. The night before you want your ice cream, put 2 cups fresh mint leaves and 2 pinches salt in a large bowl. Meddle the leaves until soft and the oil is coming out.
  2. Add 1 1/2 cup cream, 1 3/4 cup raw milk, and 1 tbsp vanilla to the bowl and stir.
  3. Cover the bowl and place in the fridge overnight to allow the flavors to marinate.
    Also, make sure your freezer bowl is in the freezer overnight so that it is ready in the morning.
  4. The next morning, strain the leaves out. Then, add 4 egg yolks and 1/2 cup maple syrup and mix until well combined.
  5. Pour the mixture into the freezer bowl in the ice cream machine and churn for about 15-20 minutes until it reaches your desired consistency.
  6. While the ice cream is churning, chop 1/2 cup dark chocolate chips into smaller pieces and pour into the ice cream as it hardens.
  7. Serve right away or store in the freezer.

Notes

Store the ice cream maker bowl in the freezer anytime you’re not using it so that you don’t have to plan a day in advance and put it in the freezer the day before making ice cream. It’s always ready to make ice cream that way.
 
Because this doesn’t have antifreeze in it, this ice cream may freeze really hard after a couple days in the freezer. 
 
Homemade ice cream also melts faster.
