These sourdough einkorn muffins made with fresh rhubarb and ginger may just be my favorite muffin in the summertime. The rhubarb and ginger pair so well together. Throw in the tanginess from the sourdough and the nuttiness from the einkorn and you’ll have an incredibly delicious muffin!

Honey instead of sugar
Sourdough discard or active starter provides a yummy tangy flavor to the muffins
Eggs
Vanilla we use homemade vanilla extract

Can I use a different kind of flour?
Yes! You should be able to substitute 1:1 in this recipe.
Is einkorn healthy?
Einkorn is known as the original grain or the oldest, most ancient grain. It has many nutrients such as protein, fiber, iron, and B vitamins.
Is einkorn gluten free?
No. There is gluten in einkorn but it is a different type of gluten that is much easier for many people to digest.
Is fresh milled einkorn better than all-purpose einkorn flour?
Definitely. By using fresh milled flour of any kind, you are getting much more nutrients in their natural form than flour that has been sifted and turned into all purpose as I explain in my post here. However, all-purpose einkorn is still much more nutritious than other types of all-purpose flour as Dr. Axe explains here.

Ingredients
Method
- Preheat oven to 350 degrees and line a muffin tin.
- In a stand mixer, create a creamy honey butter by mixing 1/2 cup butter and 3/4 cup honey.
- Add in the rest of the wet ingredients- 1/2 cup sourdough starter, 2 eggs, 1 tsp vanilla, and 1 tbsp freshly grated ginger and combine.
- Next, add in the dry ingredients- 250 g einkorn, 1 tsp baking soda, 2 tsp baking powder, 1 tsp salt, 1/2 tsp cinnamon, and 1/4 tsp nutmeg and combine.
- Fold in 1 cup diced rhubarb and then use a cookie scoop to fill the lined muffin tin. Make sure each one is about 3/4 of the way full.
- Bake for 20 minutes until a toothpick comes out clean and the tops are slightly golden brown.
- Let muffins cool in the muffin tin.
