Healthy Vanilla Ice Cream

Have you ever looked at the ingredients list on your favorite store bought ice cream? It’s depressing. But, once I discovered this recipe for easy homemade ice cream that is both, healthy AND delicious, I actually don’t enjoy my favorite store bought ice cream anymore. It just doesn’t taste good to me anymore.

I’m so excited to share this recipe because did I mention it’s easy, healthy and delicious?! It’s literally a superfood and so nutrient dense. And to me, it tastes a thousand times better than any store bought ice cream! You can easily customize this recipe and play around with different flavorings. I’ve made lemon with fresh lemon juice and zest, coffee with freshly ground espresso and chocolate with cocoa powder! You can even add fresh mint and chocolate chips to make DELICIOUS fresh mint chocolate chip ice cream! This vanilla recipe is my go-to though and my family loves to eat on its own or topped with my fresh milled einkorn chocolate chip cookies!

This recipe is amazing because it is seriously so healthy for you and so simple to make. In this yummy ice cream, you are getting tons of fat soluble vitamins such as vitamin A, D3, E and K2. It also has lots of bioavailable calcium, choline, vitamin B12, healthy fats and protein. The raw honey provides a yummy sweetness as well as a ton more benefits to our gut, cardiovascular, brain, skin, eye and oral health. Check out this article from Heart and Soil to learn more about why raw honey is a true superfood.

Is raw milk safe?

Depends on who you ask. As long as you are sourcing from a clean farm you trust, yes. If you look at history, raw milk is what our ancestors drank. There are multiple studies that show that raw milk is actually a lot safer to drink than pasteurized milk unlike what the mainstream media led us to believe. Paul Saladino and Ancestral Wisdom share a lot on this topic and the studies.

Are raw egg yolks safe?

Just like raw milk, depends on who you ask. Again, you will want to find a farm that you trust. Consuming raw egg yolks (and raw milk) from a reputable source, provide many bioavailable nutrients that are otherwise lost in the cooking or heating process.

Healthy Vanilla Ice Cream

This treat is an actual superfood and absolutely delicious!

  • 1 1/2 cup raw milk

  • 4 egg yolks
  • 1/3 cup raw local honey or maple syrup
  • 1 1/2 tbsp vanilla extract we use homemade
  • 1 pinch salt

Method

  1. Mix all ingredients together in a large bowl.
  2. Pour into ice cream machine and churn for about 20 minutes until it reaches your desired consistency.
  3. Enjoy by itself or top with homemade chocolate chip einkorn cookies or fresh fruit!

Notes

Store the ice cream maker bowl in the freezer anytime you’re not using it so that you don’t have to plan a day in advance and put it in the freezer the day before making ice cream. It’s always ready to make ice cream that way.
Because this doesn’t have antifreeze in it, this ice cream may freeze really hard after a couple days in the freezer.
Homemade ice cream also melts faster.
