After I read the ingredients in the classic graham crackers from the store, I knew I had to try making my own healthy version. This recipe is not only super quick and easy to make but it’s good for you, unlike most store bought graham crackers. With fresh milled einkorn flour, you are getting a real and more nutrient dense product. See my post here explaining the difference in commercial flour and fresh milled flour. Ingredients

Einkorn we buy our einkorn berries in bulk from Grand Teton Ancient Grains

Baking soda

Salt we use this sea salt from Amazon that has been tested for low to no heavy metals contamination

Butter

Maple syrup or honey

Vanilla we use homemade vanilla extract

Molasses provides a depth to the flavor. We get ours from Azure Standard.

Sourdough starter provides a tangy flavor. You can use active or discard.

Sourdough Einkorn Graham Crackers

These sourdough graham crackers are so easy and made with fresh milled einkorn, molasses, and maple syrup instead of sugar. Make these into healthy, tasty s'mores with homemade marshmallows!

Ingredients
  

  • 1/2 cup butter softened
  • 3/4 cup maple syrup
  • 1 1/2 tsp vanilla we use homemade
  • 1 tsp molasses
  • 1 1/2 cup einkorn berries 320g
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup sourdough starter active or discard

Method
 

  1. Preheat oven to 325 degrees. Line two baking sheets with parchment paper.
  2. In the bowl of a stand mixer, combine 1/2 cup butter and 3/4 cup maple syrup for a couple minutes until incorporated.
  3. Add 1 1/2 tsp vanilla, 1/2 cup sourdough starter, and 1 tsp molasses and combine.
  4. Into a separate bowl, mill 1 1/2 cup einkorn berries and mix in 1 tsp baking soda and 1/2 tsp salt.
  5. Slowly add the dry ingredients to the wet ones in the stand mixer bowl while mixing. It should be cookie dough consistency.
  6. Split the dough in half and place each half on a baking sheet lined with parchment paper.
  7. Flatten the dough by lightly flouring the dough and place another piece of parchemnt paper on top. Use a rolling pin to flatten it out to about 1/4 inch thick.
  8. Slowly and gently remove the top piece of parchment paper and use a knife to cut into squares. Use a fork to poke holes in each of the squares. These won't rise a ton so there is no need to spread the squares out before baking.
  9. Bake for about 17-18 minutes until lightly golden brown. Let cool in the baking sheets.
  10. Enjoy as s'mores or in a bowl with raw milk for healthy cereal!

Store in an airtight container on the counter for up to a week.
