Freezer-Friendly Fresh Milled Einkorn Chocolate Chip Cookies

These one bowl, freezer-friendly chocolate chip cookies are incredibly easy to make and never disappoint!

Ingredients
  

  • 2 cups einkorn berries
  • 1 tsp baking soda
  • 2 pinches salt
  • 1 cup maple syrup
  • 1 cup butter softened
  • 2 eggs
  • 1 1/2 tsp vanilla we use homemade
  • 2 cups dark chocolate chips or milk chocolate chips

Method
 

For baking right away:
  1. Preheat oven to 350 degrees and place parchment paper on a baking sheet.
  2. Mill the 2 cups einkorn berries into the bowl of a stand mixer. Add the rest of the ingredients, except the chocolate chips, and mix until well incorporated.
  3. Fold in the chocolate chips.
  4. Use a 1 Tbsp cookie scoop to form balls and place on baking sheet at least 2 inches apart.
  5. Bake for 12 minutes and then let cool on the baking sheet.
  6. Enjoy warm with a glass of raw milk or a bowl of homemade ice cream!
For freezing and baking later:
  1. Mill the 2 cups einkorn berries into the bowl of a stand mixer. Add the rest of the ingredients, except the chocolate chips, and mix until well incorporated.
  2. Fold in the chocolate chips.
  3. Use a 1 Tbsp cookie scoop to form balls and place on baking sheet, You can place them very close together but not touching.
  4. Place sheet in freezer for about an hour to flash freeze them so that they won't stick together. Then, put the balls into a ziplock bag to store in the freezer.
  5. When ready to bake, pull out of the freezer and bake for about 12-14 minutes at 350 degrees.

Notes

Leftover baked cookies? Store in an airtight container for up to a week.
You don't have to let the frozen cookies thaw before baking. They just might need another minute or two longer in the oven than the normal 12 minutes.
