In a glass jar, combine about 1 1/2 cup filtered water, 1 tbsp diced organic ginger, and 1 tbsp organic sugar. Stir until sugar is dissolved.
Close the jar lid tightly and leave on the counter for a day (about 24 hours).
The next day, add 1 tbsp diced ginger and 1 tbsp sugar. Stir until sugar is dissolved. Close the jar lid tightly and leave on the counter. Repeat daily for a total of 5 or 6 days.
By day 3 or 4, you should be noticing some activity and fizziness in your ginger bug, especially when you open the lid.
By day 5 or 6, your ginger bug should be ready to use. It should be fizzy and have a pleasant yeasty smell. It should be a cloudy yellow color and some white sludge at the bottom.
